Del Suelo Liso Mezcal is produced in Oaxaca from 100% Espadín agave using traditional methods. The agave hearts are roasted in underground wood-fired pits, crushed with a tahona stone wheel and slowly fermented before double distillation in copper pot stills. Bottled unaged, it presents a clear expression of the spirit. Expect notes of roasted agave, light earthiness and measured smoke, with a clean profile suited to sipping neat or mixing in cocktails.

Nose

The nose on this is big, bold, and distinctly mezcal with that undeniable agave character followed by a burst of tropical fruits, aloe vera, and bright white flowers. The smoke is sitting nicely in the background and is more barbecue. The palate is rich and moreish. The initial burst is of tropical fruits – pineapple, mango, lychee – before moving into green olives and earthiness, and finally rounded out by that lovely soft smoke. The alcohol is well integrated and leaves a refreshing menthol character right on the slightly numbing finish. The finish is long and complex, highlighting more of those white flowers that were on the nose and evolving into the heady smoke, which is the lingering note on the palate.
