Zacal, Maguey Manso Sahuayo Joven

Distilled by Mezcal maestro, Milton Ochoa in the Michoacán region of Mexico, which lies further northwest than Oaxaca and is arguably the spiritual home of Mezcal, Zacal shines a light on the semi-wild Manso Sahuayo agave, which thrives in the highland volcanic earth of the region.

Dry smoke, oak spice
The nose is sharp and herbal with cut grass, mint and fresh pepper backed by a light creaminess. Smoke is present but never dominant. The palate keeps that balance, adding cucumber, watermelon and candied fruit beside pepper heat. It closes quickly with a smoky, savoury dryness.
