The Heart Cut, Fielden 2019
Fielden is a 100% English rye whisky finished in a 45-year-old ex-solera oloroso sherry cask from Sanlúcar de Barrameda — and it's exactly the kind of singular, story-led bottling that has made The Heart Cut one of whisky's most exciting independent bottlers. Founded by husband-and-wife duo Georgie and Fabrizio, who personally select every cask, the company was named Best Independent Bottler in the World at the World Whisky Awards in both 2024 and 2025.

The nose on this is so inviting. Sweet and moreish, there are immediate notes of banoffee pie, Biscoff biscuits, demerera sugar, moving into toffee apples, and salty, buttered popcorn. It is really revelatory, opening up constantly with sweet and salt balancing each other out constantly. The palate is beautifully rounded with some immediate creaminess, which brings those sweeter notes of banoffee, biscuit, and butter to the forefront, before a welcome and surprising dryness that concentrates the spiced notes as well as some of the saltier compounds too, which take on a cindered character. The finish is lovely and long with those sweet and salty notes marrying together once more. There is certainly a lingering spice, which is a nod to the rye used by Fielden, and that banana comes back around right on the end.
