House of Hazelwood, Calm Waters

Calm Waters is a 34-year-old blended malt in House of Hazelwood's Legacy Collection, the more accessible of its two ranges, sitting below the rarer Charles Gordon Collection. Drawn from a mixture of first-fill and refill sherry butts, it is a heavily sherried Speyside of the kind that usually commands several thousand pounds a bottle. Bottled at cask strength, 52.1%, and limited to 297 bottles. Managing director Jonathan Gibson calls it a reflection of quiet strength.
Nose
Fudge, caramel, licorice
Palate
Fennel, vanilla, aniseed
Finish
Cacao, oak spice, herbal notes
A really complex nose with notes ranging from deeply sweet to lightly floral and herbaceous. The sweeter notes include refined sugars like toffee, fudge, and caramel. This is mixed with licorice and fennel, and that first sniff is like opening a box of assorted Christmas candy. The taste is full-bodied and equally complex. The spicier notes lead the way before notes of vanilla fudge come through. There's no real sense of age here, and it carries a particular weight all the way through to the end.
