The GlenAllachie, 21 Year Old Batch 7

The seventh batch of GlenAllachie's 21 Year Old sits at the top of the distillery's core range, and like its predecessors, it was built by master distiller Billy Walker, who has run the place since 2017. It began in bourbon barrels before an extended secondary maturation in Pedro Ximénez and Oloroso sherry puncheons and hogsheads. It's bottled at its natural cask strength of 51.9%, without added coloring or chill filtration.
Nose
Ginger spice, mocha, chocolate
Palate
Black cherry, crystallized ginger, honeycomb
Finish
Hazelnut praline, brandysnaps, stewed fruit
Another triumphant vintage GlenAllachie, with a superb balance of fruit freshness, sweet opulence, and more complex, darker flavors. The move from fragrant spice to intriguing honey, coffee, dark chocolate, and an abundance of mature fortified wine notes – not sherry in the traditional sense, but sweeter and more elegant – is effortless. It gives you a whisky that has structure, depth, and vitality without the hallmarks of too much age and oakiness. Very well put together indeed.
