The Fife Arms bottled this limited-edition single cask Scotch whisky to celebrate the autumn season. It was matured for 12 years in a first-fill ex-Bourbon cask, and just 178 bottles were drawn at 59.5% cask strength, making this Highland single malt a rare collector’s release. Each bottle comes with a bespoke reusable holder by Bill Amberg, crafted from British wool felt and tan leather, to be reused as a carrier or cooler after opening the whisky.

Nose

Peat moss, eucalyptus

Palate

Black pepper, green apple skin, lemon zest

Finish

Citrus fruits, oak spice

The first impression is gentle and approachable, opening with soft floral notes, fresh character, and an easy sweetness that never overwhelms. On the palate, the alcohol arrives sharply at first, bringing a crack of peppery spice before settling with a drop of water into brighter flavours of tart Granny Smith apple and lemon. The texture stays light throughout, giving it more lift than weight. The finish is medium in length, with lingering spice and citrus. Overall, it drinks as a modest 12-year-old Scotch, lighter than its ABV suggests, with a style that feels deliberately shaped for its hotel setting.
