Upon release in 2021, The Singleton Paragon of Time No.2 became the oldest release ever bottled under The Singleton name. It was distilled in 1966 and aged for 54 years, with just 235 bottles released. The whisky was matured in an oak butt before a final period in a Pedro Ximénez sherry–seasoned cask. Long ageing has brought depth and composure rather than excess, with the oak shaping the spirit gradually over decades. It is a rare example of extended maturation handled with restraint.

Cherry, oak spice, dunnage warehouse, hessian, mint

Palate

Dried fruit, oak spice, orange peel

Finish

Oak spice, tannins, cherry compote

Wine notes hit first with maraschino cherry and dried spice before older elements emerge: warehouse earth and hessian. A trace of mint lifts it. The palate is delicate with dried fruit, warming spice and orange peel giving a bittersweet edge. The finish is long and drying with fading sweetness.
