The Singleton Epicurean Odyssey 39 Year Old is the second release in a three-part series and reflects an extended, complex maturation regime. The whisky spent its first 12 years in ex-bourbon casks, followed by a further 27 years in a combination of ex-port, red wine, PX and oloroso sherry casks, the longest secondary maturation in the distillery’s history. It was then briefly married in French Bordeaux barrels, adding a final layer of structure and depth.

Nose

Fruit cake, raisins, brandy snaps, oak spice

Palate

Blackberry, baked apple, oak spice, beeswax

Finish

Oak spice, peppermint creams

The nose carries classic Christmas cake notes: sherried raisins, brandy snaps and warm spice. The palate hits immediately with sweetness and a waxy texture carrying blackberry crumble and baked apple. Wood spice grows steadily. The finish is long with lingering spice and a cool peppermint lift.
