Talisker released Forests of the Deep, its oldest whisky to date at 44 years old. Created with Parley for the Oceans, the whisky was given a final maturation in casks made from staves that travelled to the Cape of Good Hope during an expedition exploring South Africa’s kelp forests. Back on Skye, the staves were charred using sustainably farmed sea kelp and wood shavings. Limited to 1,197 bottles, it shows saline smoke, coastal sweetness and deeper savoury maturity.

Marine smoke and salty sweetness define the nose with seaweed, antique wood and an emerging umami layer. The palate is savory and elegant with roasted shellfish, briny oak and distant bonfire notes. Water reveals sweetness before Talisker's pepper warmth reasserts itself. The finish is long and mellow with coastal smoke, leather and sea salt.
