Highland Park, Sherry Skies

Highland Park released Sherry Skies as a farewell bottling for master whisky maker Gordon Motion, marking the final release of his 16-year tenure at the distillery. The 19-year-old single malt was drawn from nine carefully selected casks, including sherry-seasoned European and American oak quarter casks and first-fill ex-bourbon barrels. The whisky showcases Highland Park’s coastal character, combining sweetness, sherry depth and aromatic peat in a style closely associated with Motion’s approach.

Maple syrup, raisins and toasted oak shape the nose while soft peat smoke and a coastal minerality sit behind. The finish lands on cracked walnuts, toasted oak and a touch of spice.
