Caroni distillery, founded around 1918 in Trinidad, closed in 2003 as the island's sugar industry collapsed — first the refinery, then the distillery itself. The site has been reclaimed by vegetation ever since, and surviving casks have become increasingly scarce and sought-after. The Last Drop acquired two — distilled in 1997 and 1999 — and blended them into a single release. That marriage of two casks from a defunct distillery, now over two decades gone, is the entirety of what this rum is.

Nose

Pineapple, vanilla cream, jasmine tea

Allspice, burnt pineapple, polished oak

Finish

Lingering warmth, burnt caramel, candied orange

The nose is bright and welcoming, with an immediate hit of pineapple, followed by sweet, creamy vanilla, subtle spice, and the emergence of florality like jasmine and violet. On the palate, these notes intensify – the pineapple becomes grilled, while the sweetness turns to a singed caramel, and there are some really distinctive notes from the cask, too, which taste like it's been licked with a coat of polish. The finish is beautifully warming, and a slight note of candied orange keeps it bright alongside the intensity of burnt sugar.
