The Last Drop, Signature Creation by Louise McGuane
Last Drop Distillers released its first Irish whiskey with a 32 Year Old Signature Creation, drawn from a single ex-oloroso sherry butt and limited to 663 bottles. Created by whiskey bonder Louise McGuane, the release combined parcels from several mature casks to form a cohesive, long-aged single malt. Bottled at 46.4% ABV, it marked a notable moment for both Last Drop Distillers and the modern Irish whiskey category.
Nose
Fresh apple, dried fruit, cinnamon, burnt sugar, oak
Palate
Butterscotch, raisins, toasted almond, dark chocolate
Finish
Dark chocolate, fruitcake, raisins, nuts
Fresh apple, dried fruit and warming cinnamon sit on the nose over burnt sugar and a hint of oak. The palate layers creamy raisin, toasted almond and dark chocolate. On the finish, dark chocolate turns gently bitter while fruitcake, raisins and nuts linger.
