The Heart Cut, Boann, Release #23
Boann is a family-owned distillery in Drogheda, Ireland. When it opened in 2016, it brought whiskey production back to the once-thriving County Meath for the first time since the 1850s. This single-cask single pot still — distilled May 2021, bottled July 2025 — was selected by The Heart Cut, the London-based independent bottler founded in 2023 and focused on single-cask releases from distilleries beyond the Scotch mainstream. Made from a mash of malted and unmalted barley with oats and rye, it spent its full maturation in a Moscatel de Setúbal cask and was bottled at 61.7% ABV — one of just 392 bottles.

Oak spice, dried fig, crème caramel
This whiskey is unbelievably characteristic of a single pot still whiskey and the cask in which it has spent its life. The nose is bright and lively with raspberries, a creamy sweetness, and some fruity florality jumping out of the glass. On the palate, this moves into darker red fruits like cherries, and there is some lovely spicing in there that would be found on sticky buns, cinnamon swirls, and hot cross buns. The texture is super rich, and this continues on to the finish, where more sweetness comes through in the form of burnt sugar, dried fruits, and the lasting character of wood right on the end, coming back around to that fresh raspberry kick.
