Dingle, Small Batch Single Pot Still

Situated in the heart of County Cork, Dingle Distillery produces Irish whiskeys across a range of styles, but it's the single pot still that offers its most traditional drinking experience. This is a lovely example of what single pot Irish whiskey can be, and the combination of the four casks – bourbon,
oloroso sherry, PX sherry, and red wine – all play their part in the flavor and texture.

The nose is absolutely enchanting. First off, sweet baking spices – cinnamon and nutmeg – and some glassy sugar donut glaze come through. Then, licorice (just a hint), followed by bright orange peel, dried cranberries, and some orchard fruits. The palate is much fruitier than the nose, bursting with orchard fruits before the spices take over. There is some grip on the palate in terms of texture, although initially a little thin. The finish is long, with those spices really enduring once the orchard fruits have dissipated. What is left is something warming and undeniably oak in character.
