Copenhagen has long been known for design, gastronomy and a certain pared-back creativity, but over the last decade, it has also become a hub for Nordic distilling.
At the heart of this movement is Copenhagen Distillery, an operation that embodies Denmark’s appetite for experimentation while crafting spirits with a distinctly Scandinavian sensibility. Its whisky, still young in global terms, has quickly become one of the most intriguing new voices in European distilling.
Founded with a designer’s mindset rather than a traditional whisky-maker’s blueprint, the purpose-built distillery approaches spirits as modular, creative objects. Their philosophy is rooted in minimalism: clean flavor structures, uncluttered production choices, and a focus on expressing local grain, oak and environment with precision. Yet within that simplicity is enormous freedom, particularly in their experimental series, which pushes beyond the boundaries of conventional whisky.
The distillery’s core whisky tends to highlight malt character, Nordic climate influence, and cask individuality. Rather than emulating Scottish tradition, Copenhagen Distillery leans into its own terroir. The whiskies often show bright cereal sweetness, brisk herbal edges, and a clarity that fits the Scandinavian palate. Age statements are less relevant here than the flavor; barrels are selected for what they express, not how long they have been filled. And with a capacity of just 50,000 liters of whisky production a year, it is genuinely rare stuff too.
The core range is broken down into three key labels: Raw (100% organic Danish barley, matured in brand new 225-liter Hungarian toasted oak casks), Refined (matured in seasoned Hungarian toasted oak with cask sizes ranging from 100 to 225 liters), and the Rare series, which showcases unusual grains and experimental casks. All are small batch releases and bottled at natural strength. The Raw, as close to a ‘core range’ product as this distillery has, gives notes of rich chocolate, roasted barley, deep oak spices and Black Forest gateau. It is big, bold and refined.
I was shown around the site by the man responsible for this art house-cum-science lab, Lasse Öznek. A former chemist for ‘big pharma’, what makes him unique is his ability to understand the process but lean into play. He is the Aphex Twin of the whisky world.
In a show of his dedication to flavor, we tapped a cask maturing some of Öznek’s whisky, which had been seasoned with Negroni. But not just any Negroni, one where Öznek had made the constituent parts himself: the vermouth, the bitters, and the gin. All so he could be in control of the outcome.
As we made our way through a forest of casks, including one infamous cask that had been seasoned with a ‘hunting liquor’ partly made from deer offal, it became apparent that these aren’t gimmicks but systematic explorations. This is not a distillery but an artist’s studio, the distillery’s small-batch editions serving almost like short-run prints.
Beyond whisky, the broader spirits program shows the same curiosity: aquavit infused with seasonal botanicals, gins built around Nordic herbs and limited-run liqueurs (one incredible ‘coffee spirit’, clear as vodka yet packed with espresso-style flavor). For visitors, touring the distillery offers a rare glimpse into a creative process that is iterative, playful and refreshingly unconcerned with the strict definitions that often bind whisky producers.
Copenhagen Distillery represents a new wave of Danish distilling. One that treats whisky not as a static tradition but as a living material. For drinkers seeking something that marries Scandinavian clarity with boundary-pushing ideas, this is a distillery worth watching closely. In a landscape crowded with young producers jockeying for relevance, Copenhagen stands out by simply being itself: thoughtful, experimental, and quietly confident.
