Bardstown Bourbon Co, Victoria Pineapple

Bardstown Bourbon Company's latest Barrel Finish release began with rum casks sourced from the Caribbean, previously used to age premium rum with Victoria pineapple, a small varietal prized for its sweetness. At the distillery's Bardstown facility, the casks were filled with a custom blend of 10- and 11-year-old straight bourbon and rye, with fresh pineapple introduced during finishing to mirror the original process.

I was pulled in from the start with not-so-subtle overtures to grilled tropical fruit aromatics. But subsequent sniffs revealed something unexpected: a secondary underpinning of savory rye spice. The palate confirmed that this full-bodied liquid was hiding layers of sophistication beneath the surface. Indeed, it is well after the sip concludes that this flavored whiskey really earns its flowers. There is a complex evolution into something brûléed. Candied nuts and a pinch of cinnamon are not at all suggested from the start. A rare bottling that's definitely worth seeking out.
