This unusual single malt comes from the brilliant minds behind California-based distillery St George Spirits. This three-year-old whiskey is aged in American oak and French ex-wine casks before being filtered through maple charcoal. It's then finished in casks that previously held umeshu, a Japanese-style plum liqueur. If you're looking for something experimental, this is certainly it. This is a whiskey that will stretch your palate and your understanding of what American whiskey can be.

Nose

Citrus oil, Peach, mango, nectarine

Palate

Plum, nectarine, apricot

Finish

Dried flowers, grapes

The nose is intensely perfumed and fruity, led by citrus oil, dried peach, and mango, with juicy nectarine and sweet bubblegum grape notes alongside. On the palate, those flavours become more pronounced, bringing an immediate mouth-watering brightness. Stone fruits take centre stage, with plum, nectarine, and apricot, the latter a clear nod to the umeshu casks, while a gentle waxiness adds texture. The finish is medium in length, and where the umeshu influence speaks loudest, showing an unusual dried florality that was less evident earlier. Sweet grape notes linger to the close.
