The Last Drop, Buffalo Trace 27 Year Old, Release No.37
The Last Drop Distillers released a 27 Year Old Kentucky Straight Bourbon as part of its 2025 Collection, drawn from three casks distilled between 1995 and 1997 at Buffalo Trace. The barrels were married and bottled after extended maturation in the distillery’s controlled Warehouse P. The bourbon shows depth without excess oak, with seasoned wood, dark fruit and a firm rye-led spice. Long ageing delivers balance rather than dryness, resulting in a composed, warming profile.

Toasted walnut leads on the nose with stewed plum and sticky toffee pudding, then clove, nutmeg, fennel seed and a cool eucalyptus edge from the rye. The palate comes in firm with cedar and roasted hazelnuts before treacle sweetness, blackberries, pipe tobacco and worn suede build depth. The finish is mature and composed with spiced fig, honeycomb, gentle wood tannins and a touch of white pepper that leaves a poised, controlled warmth.
