Eagle Rare, 25 Year Old

The oldest Eagle Rare ever upon release, this 25 Year Old was limited to just 200 bottles. Aged in new American oak, the whiskey pushed the practical limits of bourbon maturation, where climate and cask interaction accelerate ageing far faster than in Scotch. Part of a long-term experimental programme, the bourbon spent its final years in the distillery’s temperature- and humidity-controlled Warehouse P. The result demonstrated a carefully managed approach to extended ageing, balancing oak influence with depth, maturity and complexity at an age rarely achieved in Kentucky.
Nose
Butterscotch, vanilla, black cherry jam, peanut brittle, dark chocolate
Palate
Vanilla fudge, oak spice, pencil shavings, black pepper
Finish
Oak spice, worn leather, dark chocolate
The nose is layered with butterscotch, vanilla and a richer sweetness of black cherry jam and peanut brittle, while deeper aromas of oak and dark chocolate sit underneath. The palate stays surprisingly light, carrying vanilla fudge before the oak grows more assertive with leather, pencil shavings and black pepper. The finish leans heavily into oak yet avoids drying out, and a splash of water lifts the spice into a warm, steady burn.
